Spend day one in Sultanahmet (Hagia Sophia, the Blue Mosque, the Basilica Cistern), day two at Topkapi Palace, the Grand Bazaar, Süleymaniye Mosque and the Spice Bazaar, day three on the Bosphorus, at Dolmabahçe Palace and in Taksim, day four on the Asian side in Üsküdar and Kadıköy, and day five in Eyüp and Balat before heading to the airport. After checking in, head to Sultanahmet Square, where Hagia Sophia and the Blue Mosque face each other across a garden, next to the old Hippodrome with its Egyptian obelisk. The underground Basilica Cistern is a few steps away, so the whole day can be done on foot. Hagia Sophia and the Blue Mosque are both working mosques: avoid prayer times for sightseeing, dress modestly, and women should bring a headscarf. End the evening with a relaxed stroll around the square.
Start at Topkapi Palace, the Ottoman sultans' residence just behind Hagia Sophia, then walk down through neighbouring Gülhane Park. Take the T1 tram to Beyazıt–Kapalıçarşı for the Grand Bazaar, walk uphill to Süleymaniye Mosque for its views over the Golden Horn, then descend through the market lanes to the Spice Bazaar in Eminönü. Finish on the Galata Bridge at sunset. Check the palace's current visiting days before you go, and note that the Grand Bazaar is closed on Sundays.
Spend the morning on a Bosphorus boat trip from Eminönü, passing palaces, bridges and old waterfront houses on both shores. Then ride the T1 tram to its last stop at Kabataş for Dolmabahçe Palace on the waterfront; if time allows, continue along the shore to Ortaköy Mosque beneath the Bosphorus Bridge. Back at Kabataş, take the funicular up to Taksim Square and walk down İstiklal Avenue to Galata Tower for the evening. Check Dolmabahçe's visiting days in advance, and wear comfortable shoes, as Beyoğlu's streets are steep.
Cross to Asia on the Marmaray train from Sirkeci or by ferry from Eminönü to Üsküdar, whose waterfront looks out on the Maiden's Tower. Take a short taxi ride up Çamlıca Hill to its great mosque for a wide view over the city, then move on to Kadıköy to wander its market streets and walk the Moda seafront. Take the ferry from Kadıköy back across the Bosphorus in the evening; the crossing itself is one of the best sea views in the city.
In the morning, go by bus or taxi along the Golden Horn to Eyüp Sultan Mosque, home to the tomb of the Companion Abu Ayyub al-Ansari, then ride the cable car up to Pierre Loti Hill for a view over the inlet. On the way back, stop in Balat and Fener for their colourful lanes and old houses. Keep the rest of the day for last-minute shopping, and leave plenty of time for the road to the airport: both Istanbul Airport and Sabiha Gökçen are far from the historic centre, and traffic can be heavy. Ask your hotel whether it can hold your bags after check-out.
An Istanbulkart works on the metro, tram, ferries, buses and Marmaray, and one card can be tapped once for each person in your group; it is usually quicker and better value than taxis in busy areas. For families, the old districts have cobblestones and slopes, so a light stroller or a baby carrier is easier, and Gülhane Park, the Moda seafront and ferry rides are all good with children.
